I remember The Dead Zone being pretty good. It's from the 80's, a Stephen King story. Basically a guy wakes up from a coma and becomes a psychic detective. Added bonus: Christopher Walken is in it. How could you go wrong? :)
And if that's not enough, try "Winning Girls Through Psychic Mind Control". :)

As far as recent movies go....
"Next" with Nicolas Cage was pretty decent. Its about a guy who poses as a magician, but he really can see the results of all choices he makes 2 minutes ahead of time.
"Premonition" with Sandra Bullock is real good. Generally I have stayed away from Bullock movies since my wife brought me to see "The Lake House" telling me it was a time travel movie with Keanu Reeves. Turns out its a chick flick with time travelling letters.
"The eye" was ok, but not one I would ever watch again. If you are paying money to see them, don't bother seeing this.
"The Orphanage" was not really about psychics, but has psychic themes. This was a real good one, but its in Spanish so you either have to watch it with subtitles or dubbed over.

Secrets of the Psychics, made by Nova with James Randi is at the top of my list.
After that, Penn and Teller did a great episode on people who "talk to the dead" on their show BS.
Bill Nye did an episode on his newer show "The Eyes of Nye" on pseudoscience which addressed psychics.
The only fictional program about psychics that I've seen so far that I've liked is the t.v. show Psych.

I'm a fan of Horror movies.Zombie movies being on the top of my list psychic movies on the bottom. To me they are too slow moving and without enough payoff. There have been some good ones though."Firestarter" was good but the best one I've seen is"The Fury".

One relatively recent one I love is "The Gift" with Cate Blanchett and alot of other star power. Cate is a struggling, widowed mother with the "gift" and does readings for pay. Suddenly, she starts having visions of a murdered girl and helps to solve the mystery! Enjoy ♥
